Cheese with quince paste and figs
Hi,
Both quince paste and figs are products very typical of autumn so I played a bit with them and get this dessert which is really simple, it takes just a few minutes to prepare and it’s delicious.
Ingredients:
- Feta cheese
- Quince paste
- Figs
Simply laminate the feta cheese. You can use other cheese but the salty taste of this cheese will make a great contrast of flavors. Laminate also the quince paste and place one sheet on top of a cheese sheet. Finally laminate a fig and place some pieces over the quince paste.

Lemon pasta

Some days ago taking a look on my old bedroom on my parent’s house I’ve found a book by Giuliano Hazan, The classic pasta cookbook, truly an amazing book teaching you how to make fresh pasta yourself, as well as most popular italian sauces and a lot of recipes with pasta. And this catch my eye for unknown reasons, maybe because I like to cook with lemon, who knows? The result is really amazing and straightforward to cook, unfortunately it’s not a good idea to eat it every day because it has a considerable amount of fat.
Ingredients:
- Pasta
- 1 lemon
- 50 gr butter
- 100 ml milk cream
- Parmeggiano cheese
- Optionally fresh basil and ground pepper
So let’s start adding about 50 gr of butter on pan, better cut in small cubes. When butter is melt add the juice of one lemon as well as lemon zest, cook the butter with lemon for about half minute. Then add about 100 ml of cream milk and cook until the sauce reduces to less than half of it’s initial volume stirring some times.
Reserve the sauce and cook the pasta in boiling water with a bunch of salt. When pasta is cooked drain it and add to the pan back to fire stirring to mix all well. Finally add some grated parmeggiano cheese and optionally fresh chopped basil and ground pepper.

Hamburguers
Hello,
Hamburgers have some bad reputation due to some fast food stores, but they can turn to be a really nice meal. On this recipe I will show you just a basic way to prepare them, but I aim you to experiment some extra features to the recipe and have fun.
Ingredients (for 4 hamburgers):
- 400 gr minced meat
- 2 garlic cloves
- 1 onion
- Pickles
- A bunch of parsley
- Breadcrumbs
- 1 egg
- Hamburger bread
- Cheese
Add 400 gr of minced meat in a bowl, add some salt, ground pepper, 2 crushed garlic cloves, a bunch of chopped parsley, one egg and half grated onion. I used veal meat, but you can use pork, a mix of veal and pork or even some other kind of meat. Of course you can also add some more ingredients to the mix, like soy sauce, mustard, some spices mix. Mix everything with your hands until well combined.
Now add some breadcrumbs and mix again, you need to add enough to dry a bit mix and get it compact.
You can cut a cross to separe the meat mix, and take each portion with your hands. First make a ball with the meat, and then press the ball so it takes hamburger shape.
While heating the grilling you can put on it the bread so it gets toasted. Take a look and when it is toasted put a slice of cheese on top so it will get melted. Once you toasted the bread add some olive oil in the grilling and then the hamburgers. Flip them several times until cooked the way you like, on the last turn you can put a slice of cheese on top, so with the heat it will melt.
Now just build your hamburgers placing the meat in the bread and adding some extra ingredients like onion and pickels. Or you can try also with salad, tomato, guacamole, just use your imagination and enjoy.

Pizza

I really love pizza, without any kind of doubt it deserves to be in a top list of food inventions, it’s kinda those recipes you will eat each day, and probably you will need long time to hate it :). For this pizza I made a dough which is very similar to bread, it give pizza a stunning looking and also great taste. Regarding the ingredients, I’ve used just a small set, so just use your imagination and/or preferences to cook pizza.
Ingredients:
- 300 gr flour
- 50 gr olive oil
- 2-3 gr dry baker’s yeast
- Crushed tomatoes
- Tunna
- Mozzarella cheese
- 6 olives
- Oregano
Let’s start making the dough, in a bowl put 300 gr of flour and 2-3 gr of dry baker’s yeast, mix well with your hands. Add a coffeespoon of salt and like one tablespoon of oregano, mix again with your hands. Add 50 gr of olive oil, and 150 gr of water, better it is warm. Mix well with a wooden spoon until the dough is formed, then knead with your hands first on the bowl, and after a while spread a bit of flour in the table and continue kneading on the table for at least 5 to 6 minutes until dough becomes very elastic and not sticky. Make a ball with the dough, spread some flour in the bowl, and keep the dough in the bowl covered with a cloth resting for at least one hour.
After one hour you can see how the dough increased it volume several times. Knead it for a while and start to give it the shape smashing the dough with your hands , slowly but constantly.
Place the dough over the oven tray and with your fingers extend the edges to give the pizza a circular shape. Let rest the dough 20-30 minutes. Smash again the dough and extend with your fingers.
Spread tomato sauce over the dough, and then spread grated mozarella cheese (or any other kind of cheese, at your choice). As said before this is a really basic pizza, I added tuna and olives and finally covered with more mozarella cheese, but just use your favourite ingredients instead these ones :).
Cook in the oven at 390ºF (200º C) for about 20 minutes, and your pizza is ready.

Stuffed bread (with ham and cheese)

This is a polyvalent recipe, you can use it for breakfast, at launch time, on a picnic … It takes its time to prepare mostly because you need the yeast to do its work, and it works at its own rythm, just be patient 🙂
Ingredients:
- ½ kg flour
- 250 ml milk
- 70 gr butter
- 70 gr sugar
- 1 egg
- Baker’s yeast (about 5 gr, dry)
- 250 gr ham
- 200 gr brie cheese
Heat 250 ml of milk and 70 gr of butter until butter is dissolved and let cool until a warm temperature. Then add ½ kg of flour in a bowl through a colander, add also 70 gr of sugar, baker’s yeast, a coffee spoon of salt and the milk with butter. Mix well first with a spatula or wooden spoon and then with your hands. Once well mixed you need to knead it on a table, keep kneading it for about 10 minutes. If it is still sticky just let rest for about 20 minutes and then will be non sticky.
Let the dough rest in a bowl cover with a cloth and let rest for at least one hour.
After that time the dough will double in volume now you have to smash it with your hands and then with the help of a rolling pin. Just stretch the dough without hesitating too much about the shape.
Once strechted cover with 2 or 3 layers of ham. Over the ham place some sticks of brie cheese.
Fold the dough and try to cover the ends. Let rest for about 1 hour. Finally paint the bread with a whisked egg and cook in the oven at 350º F (180º C ) for 20 minutes.

Parmesan chicken

Some days ago I published a recipe with a similar name (chicken with parmesan) and in fact this recipe is based on some searches on Google about it. I found this way to make chicken breaded but adding parmesan cheese to breadcrumbs, which is a nice change.
Ingredients (for 3 people)
- 2 chicken breasts
- 1 egg
- Oregano
- Breadcrumbs
- Parmesan cheese
Cut chicken breast into stripes. Add salt and pepper. Beat an egg. Add already cut chicken pieces into the beaten egg, mix them well.
On a recipient add breadcrumbs (about 75 gr), oregano (1 o2 table spoons), and grated parmesan chicken (more or less the same amount as breadcrumbs). Mix it well an add the chicken pieces. You can cook the chicken in the oven at 350º F (180º C) for 50 minutes or you can fry it in a pan. I found more interesting the results of oven, you appreciate better the taste of parmesan cheese and oregano, and it’s supposed to be healthier than fried.
To fry it add vegetabletable oil in a pan, when oil is hot add chicken pieces, cook them for about 5 minutes, and turn them several times.
Xavi’s rice

Some days ago my boss was telling me how lucky I am for knowing how to cook. Well, it’s true some recipes are not really easy, but there are some recipes really effortless and also with a nice flavor. After thinking about it, I’ve tested this recipe and named after him: Xavi’s rice
Ingredients (for 1 person):
- 100 gr dried mushrooms
- 50 gr rice
- Soy sauce
- Cheese (Old Amsterdam, Parmesan, Grana Padano …)
Add the dried mushrooms in a bowl, add hot water and let rest for 2 hours (or at least 1 hour), water must be hot but not too much, you must be able to maintain your finger inside water. After some time you kitchen will have a nice smell 🙂
Drain the mushrooms but don’t throw away the water, put it in a saucepan and when water is boiling add salt and rice (about 50 gr per person) . Cook for 15 minutes.
When rice is about to be ready add olive oil in a wok, and when oil is hot add the mushrooms, salt and pepper. Cook them while stiring for 3-4 minutes. Add soy sauce and then rice previously strained, stir and cook for 3 minutes.
Serve and add grated cheese over, I used Old Amsterdam, but parmesan or grana padano should be also nice.
Zucchini and feta cheese buñuelos

These buñuelos are different from the ones you can typically find in Spain, they are not round, not so small, but anyway it’s a fantastic vegetarian recipe.
Ingredients (for about 15 buñuelos):
- 2 zucchini
- 1 onion
- 4 flour tablespoons
- 300 gr feta cheese
- 2 eggs
- 12 mint leaves
Start grating 2 zucchini using a grater not too thick. Add salt to them and let rest some minutes.
Cut an onion into strips, add olive oil in a pan, when the oil is hot add the onion, salt and pepper. Stir frequently and cook for 5-6 minutes.
With your hands squeeze the zucchini so they drop as water as possible. Put the zucchini in a bowl and add 2 eggs, feta cheese shredded and 12 mint leaves chopped. This mint will give a fresh flavor, which is nice in something fried. Mix well all ingredients, add the onion and mix again. Finally add 4 flour tablespoons and mix it well.
Add vegetable oil in a pan. To know if the temperature is good to fry, insert a wooden spoon in the oil, if bubbles appear around the spoon then the temperature is right. Add portions of the mix with a tablespoon. Cook them for 3 minutes, turning several time so they cook uniformly. Let rest the buñuelos over a paper towel. Wait some seconds before adding more to the pan, so the oil rises again its temperature.
Chicken with parmesan

I saw Jamie Oliver doing this recipes, this is one of these ideal recipes to start cooking, because it’s easy to do and have a great taste, so you will encourage to cook other recipes 🙂
Ingredients (1 person):
- 1 chicken breast
- 1 ham rasher
- 1 lemon
- Parmesan cheese (grated)
- Thyme
- Rosemary
Put a chicken breast over transparent film, add salt, rosemary and thyme, grate a bit of lemon skin, cover with grated parmesan cheese, and finally cover with 2 ham rashers. Wrap with the film and bash with a pan. Doing this the chicken breast will have an uniform thicknes to cook better, and will absorve the spices to taste better.
Add olive oil to pan, and when oil is hot add the chicken breast with the ham side down, add salt and pepper. And cook for 7-8 minutes turning chicken breast several times.
Spinach and feta cheese pie

This recipe is based on a video from Jamie Oliver, but instead of using philo pastry (because I didn’t find on supermarket) I’ve used shortcrust pastry so it will be more similar to a quiche.
Ingredients:
- 4 eggs
- 400 gr feta cheese
- 1 spinach bag
- 1 sheet of shortcrust pastry
- Pine nuts
- 1 lemon
- Grated emmental cheese
- Nutmeg
To prepare this spinach and feta cheese pie, which is very similar to a quiche we will start putting a pan in the fire. When pan is hot add pine nut and keep on fire for about 5 minutes until the are toasted. On the same pan add some oil oil and the spinach bag. Don’t get foolish about how much space they take at the beginning as will reduce a lot. Add some nutmeg to the spinach as well as grate the skin of a lemon. Move them and cook until they get reduced.
On a bowl add 4 eggs, 400 gr of shredded feta cheese, black pepper and some grated emmental cheese. Mix and crush it will with a fork. Then add the toasted pine nuts and spinach. Mix it well.
Cover the mold with a sheet of shortcrust pastry, leaving the paper so it will be easier to unmold. With your hands accomodate the shortcrust pastry to the mold. Fill it with the mix, and distribute well with a spoon. Cut the waste of shortcrust pastry, leaving about 2 fingers above the mix. Cover with grated emmental cheese and cook in the oven at 400º F (200º C) for 25 minutes.
