Cocido montañés

Recently on the video explaining quesada pasiega recipe a youtube user (digbychick) suggested me to show how to prepare another typical dish from Cantabria, and based on the description done by him I supposed it was cocido montañés. Fortunately I bring an apron from my holidays last summer in Cantabria on which is printed the recipe. It’s a really nice recipe for cold days, it’s really easy to prepare, perhaps it’s only difficulty will be bring to home all ingredients, so better write down the list before going to market 🙂

Ingredients (4 people):

  • 200 gr white beans
  • 200 gr fresh bacon
  • 1 pig’s trotter
  • 1 pig’s ear
  • 250 gr pork chop
  • 4 blood sausages
  • 1 piece of ham bone
  • 1 potato
  • 1 turnip
  • ½ cabbage
  • 2 garlic cloves
  • Sweet paprika

On a bit pot add one pig’s trotter, one pig’s ear, 200 gr of fresh bacon, a piece of ham bone, 250 gr of pork chop. And 200 gr of white beans, these beans must be in water all the night before, taking in mind they would double their size. Add also some salt and cover all ingredients with cold water. Cover the pot with a lid and cook for 2 hours, take a look from time to time, and if it’s getting short of water add more water, but heat it first otherwise you will break the cook process.

After 2 hours cooking add ½ cabbage, 1 turnip and 1 potato all them cut in small pieces and cook them for 20 minutes, add also the blood sausages.

While vegetables are cooking add a bit of oil in a pan, and add 2 laminated  garlic cloves when the oil is still cold. When garlic becomes golden turn off the heat and add 1 or 2 tablespoons of sweet paprika, then mix them. Put the garlic and paprika in a mortar and grind them. Then add this mix to the pot, you can help with the water to get the most of the mix. Now just wait the 20 minutes from  vegetables aggregation and your cocido montañés is ready.

Pasta with shiitake

This recipe was possible due to a lack of ingredients one sunday night. I remember I had some mushrooms on the fridge so I put my imagination to work and end up with this. It’s quite interesting because except for the shiitake mushrooms (which you can replace with another kind of mushrooms) all other ingredients are quite common on your storeroom.

Ingredients:

  • Pasta
  • Crushed tomatoes (300 – 400 gr)
  • 200 gr shiitake
  • 1 onion
  • 2 garlic cloves

Start cutting in very small pieces about 200 gr of shiitake, or another kind of mushrooms. Chop one onion.

Add a bit of oil in a pan, and put on the heat a large pot with water. Add the chopped onion and shiitake in the pan as well as a bit of salt. Stir frequently. Shiitake or mushrooms will drop some water, wait for the water to be almost evaporated and then add 2 crushed garlic cloves, stirring and cooking for about 2 minutes. Then add the crushed tomatoes , mix well and stir frequently. You need to maintain in the heat until the sauce gets the consistence you want, normally about 8 to 10 minutes.

When the water is boiling add a generous amount of salt, and then the pasta and a bit of olive oil or butter. Cook the pasta the amount of time indicated on its package. Then strain the pasta and add to the pan, so the pasta get the flavor of the sauce. You can spread over some fresh chopped basil and or grated cheese.

Chicken with peach sauce

I was watching on TV Man vs food, and a recipe catch my attention, unfortunately as I was doing other thing I was not able to pay full attention to it, so I did it with some inventions on my own; but despite this, the recipe is great. I really like the way combines the hot chicken with the sweet sauce, making it even suitable for people who don’t enjoy hot food.

Ingredients (for 2 people):

  • 2 pieces of chicken (preferably with bones, which are more tasty)
  • ½ lemon
  • 2 tablespoons of harissa
  • 1 tablespoon of rosemary
  • Sesame oil
  • 1 onion
  • 2 sticks of celery
  • 1 green pepper
  • 1 preserved peach with syrup

On a bowl add 2 tablespoons of harissa, a bit of salt, a bit of sesame oil, 1 tablespoon of rosemary and the juice of half lemon. Mix it. Cover the chicken pieces with this sauce, better if you use a brush and make sure the whole piece is covered.

Cook in the oven at 350º F (180º C) for one hour and a quarter, using the grill instead of tray so chicken will cook uniformly. You can turn off the oven after an hour and let cook the next 15 minutes with the residual heat.

While the chicken is cooking you can prepare the sauce. Cut in pieces a green pepper, 2 sticks of celery and one onion. Don’t worry to much about cutting them too small because at the end we will blend them. Put some olive oil in a pan and add the onion, green pepper and celery as well as a bit of salt. Cook them for 7-8 minutes while stirring frequently. Then add 1 peach and 2 tablespoons of syrup, cook together for 4-5 minutes and stir it frequently.

Put the contents of pan in a blender cup and blend it. Now place a bit of the sauce over the baked chicken and enjoy

Salmon with pasta

This is a very simple recipe, it will take you no more than ½ hour. For me it is a great dish for a supper.

Ingredients:

  • 400 gr salmon
  • Pasta
  • 1 onion
  • 2 garlic cloves
  • 2 tomatoes
  • Optionally some butter

Let’s start removing the skin of salmon, as well as spines. Then cut the salmon in small cubes. Chop an onion. And finally we will cut in small pieces one tomate and grate another one, in order to do it easier cut them in half and cut in small pieces the parts without peduncle and grate the other parts until you get only with the skin. But be careful and don’t grate your fingers!

Put on the heat a pot with water and add salt. When water is boiling add olive oil in a pan and add the pasta in the pot, adding a bit of butter or olive oil. Cook the pasta the amount of time indicated in the pasta box.

Maintain the heat on the pan at minimum and add the onion and a bit of salt. Stir frequently. When pasta is at half of its cooking time, add to the pan the salmon, 2 crushed garlic cloves and the tomatoes, and again stir them frequently. When pasta is cooked add a bit of butter in the pan and let melt while you strain the pasta.

Finally add the strained pasta in the pan, stir and mix for a couple of minutes and your dish is finished.

Sweet potato sponge cake

In Catalonia is very typical to see small stands on the street selling roasted chestnuts and sweet potatos when Halloween it’s getting close. In fact Halloween for us in the “chestnut day” and it is very typical to eat roasted chestnuts often also with sweet potatoes and with a special sweet wine called Moscatel (Muscat). But as long as I really like sweet potatos, I like to try another ways to eat them besides roasted. So I experimented time ago trying to use the sweet potato in a sponge cake with really nice results, and I come to you today with this recipe. And perhaps you can replace sweet potato with pumpkin, for a halloween sweet recipe 🙂

Ingredients:

In a big bowl let’s add 350 gr of flour, passed through a colander, one baking powder envelope, 200 gr of sugar, 100 gr of olive oil or vegetable oil, 200 gr of milk, 4 eggs, grate some lemon skin (try to grate only the yellow part, as the white one is bitter) and finally peel a sweet potato, grate it and add to the bowl.

Now whisk everything for some minutes until it’s well combined.

Use a bit of butter to grease the mold you will use to bake the sponge cake. Empty the bowl in the mold and cook in the oven at 350 F (180 C) for 30 minutes, let cold and it’s ready to eat.
