Orecchiette with broccoli
Hi,
I’ve tasted orecchiette for first time at Milan when I was working there, so this recipe remember me those days, but just for the pasta because never tasted (unfortunately) this recipe. Without anchovies this will become a great vegetarian recipe.
Ingredients (for 3-4 people):
- 200 gr orecchiette
- 1 bunch of broccoli
- 2 garlic cloves
- 1 anchovies can
- 2 spoons of capers
- Parmesan cheese
Cut the broccoli placing the edge of knive near to those tree shape bulbs. Don’t throw away the rest of broccoli, put them on a blender and add 2 garlic cloves, a tin of anchoives and 2 small spoons of capers. Blend it well.
Put watter on a pot, and when is starting to boil add a bunch of salt and the orecchiette. After 5 minutes add broccoli to the pot, and let cook for 10 minutes.
5 minutes before broccoli and pasta are ready and the blended mix on a pan with hot oil. Move to avoid it to get stuck to the pan. After 2 minutes add 2 big spoons of water from the pot where broccoli is cooking. When broccoli is ready, strain add add broccoli and pasta to the pan. Add grated parmesan cheese, and cook while moving for a couple of minutes. After serving you can add more grated parmesan cheese.
Parmesan chicken

Some days ago I published a recipe with a similar name (chicken with parmesan) and in fact this recipe is based on some searches on Google about it. I found this way to make chicken breaded but adding parmesan cheese to breadcrumbs, which is a nice change.
Ingredients (for 3 people)
- 2 chicken breasts
- 1 egg
- Oregano
- Breadcrumbs
- Parmesan cheese
Cut chicken breast into stripes. Add salt and pepper. Beat an egg. Add already cut chicken pieces into the beaten egg, mix them well.
On a recipient add breadcrumbs (about 75 gr), oregano (1 o2 table spoons), and grated parmesan chicken (more or less the same amount as breadcrumbs). Mix it well an add the chicken pieces. You can cook the chicken in the oven at 350º F (180º C) for 50 minutes or you can fry it in a pan. I found more interesting the results of oven, you appreciate better the taste of parmesan cheese and oregano, and it’s supposed to be healthier than fried.
To fry it add vegetabletable oil in a pan, when oil is hot add chicken pieces, cook them for about 5 minutes, and turn them several times.
Provenzal tuna

Tuna is a very common fish I eat, but normally in can, and it’s a pity because you can get really nice recipes with tuna, like this provenzal tuna, taken from a Gordon Ramsay’s book .
Ingredients (for 4 people):
- 600 tuna loins without spines and without skin
- 1 can crushed tomatoes
- 50 gr black olives without bone
- 1 red pepper
- 1 yellow pepper
- 1 red onion (2 if they are too small)
- 1 zucchini
- 4 garlic cloves
- 1 lemon
- Thyme
- Rosemary
Hi to prepare this provenzal tuna start chopping one red onion or 2 if they are small, if you don’t find red onion just use a regular onion. Remove the tails of a red pepper and yellow pepper and cut them into small pieces. Cut the ends of a zucchini and then cut it longitudinally, and cut again longitudinally each piece, finally cut in small cubes.
Preheat oven at 400ºF (200ºC). Add olive oil in a pan, and when oil is hot add the onion, peppers, a bit of salt and 4 crushed garlic cloves, cook them for 5-6 minutes moving to avoid them to get stuck to the pan. Add zucchini and cook for 3 minutes more. Finally add 50 gr of black olives without bone (about 20), some chopped rosemary and thyme and a can of crushed tomatoes. Add some salt and cook for 10 minutes moving frequently.
Add salt and ground black pepper to tuna loins. Put the vegetables on a baking tray, and dispose tuna loins over them with a slice of lemon over each piece of tuna. Add olive oil and cook in the oven at 400ºF for 10 minutes, some more minutes if you prefer tuna more cooked.
Finally if you don’t eat all the vegetables, just reserve them and use them to dress boiled brocoli, will turn brocoli simply delicious!
Xavi’s rice

Some days ago my boss was telling me how lucky I am for knowing how to cook. Well, it’s true some recipes are not really easy, but there are some recipes really effortless and also with a nice flavor. After thinking about it, I’ve tested this recipe and named after him: Xavi’s rice
Ingredients (for 1 person):
- 100 gr dried mushrooms
- 50 gr rice
- Soy sauce
- Cheese (Old Amsterdam, Parmesan, Grana Padano …)
Add the dried mushrooms in a bowl, add hot water and let rest for 2 hours (or at least 1 hour), water must be hot but not too much, you must be able to maintain your finger inside water. After some time you kitchen will have a nice smell 🙂
Drain the mushrooms but don’t throw away the water, put it in a saucepan and when water is boiling add salt and rice (about 50 gr per person) . Cook for 15 minutes.
When rice is about to be ready add olive oil in a wok, and when oil is hot add the mushrooms, salt and pepper. Cook them while stiring for 3-4 minutes. Add soy sauce and then rice previously strained, stir and cook for 3 minutes.
Serve and add grated cheese over, I used Old Amsterdam, but parmesan or grana padano should be also nice.
Zucchini and feta cheese buñuelos

These buñuelos are different from the ones you can typically find in Spain, they are not round, not so small, but anyway it’s a fantastic vegetarian recipe.
Ingredients (for about 15 buñuelos):
- 2 zucchini
- 1 onion
- 4 flour tablespoons
- 300 gr feta cheese
- 2 eggs
- 12 mint leaves
Start grating 2 zucchini using a grater not too thick. Add salt to them and let rest some minutes.
Cut an onion into strips, add olive oil in a pan, when the oil is hot add the onion, salt and pepper. Stir frequently and cook for 5-6 minutes.
With your hands squeeze the zucchini so they drop as water as possible. Put the zucchini in a bowl and add 2 eggs, feta cheese shredded and 12 mint leaves chopped. This mint will give a fresh flavor, which is nice in something fried. Mix well all ingredients, add the onion and mix again. Finally add 4 flour tablespoons and mix it well.
Add vegetable oil in a pan. To know if the temperature is good to fry, insert a wooden spoon in the oil, if bubbles appear around the spoon then the temperature is right. Add portions of the mix with a tablespoon. Cook them for 3 minutes, turning several time so they cook uniformly. Let rest the buñuelos over a paper towel. Wait some seconds before adding more to the pan, so the oil rises again its temperature.
Chicken with parmesan

I saw Jamie Oliver doing this recipes, this is one of these ideal recipes to start cooking, because it’s easy to do and have a great taste, so you will encourage to cook other recipes 🙂
Ingredients (1 person):
- 1 chicken breast
- 1 ham rasher
- 1 lemon
- Parmesan cheese (grated)
- Thyme
- Rosemary
Put a chicken breast over transparent film, add salt, rosemary and thyme, grate a bit of lemon skin, cover with grated parmesan cheese, and finally cover with 2 ham rashers. Wrap with the film and bash with a pan. Doing this the chicken breast will have an uniform thicknes to cook better, and will absorve the spices to taste better.
Add olive oil to pan, and when oil is hot add the chicken breast with the ham side down, add salt and pepper. And cook for 7-8 minutes turning chicken breast several times.
Almond cookies

It’s a long time since I’ve been trying to upload this recipes; all tries ended up with a catastrophic look but with a nice taste. At least this time I’ve got with the right way to prepare as I want.
Ingredients:
- 250 gr ground almonds
- 250 gr sugar
- 4 eggs
- Vanilla extract.
Start separating the egg yolk and egg white from 4 eggs. Add 250 gr of sugar to the egg yolks, one coffee spoon of vanilla extract and whisk it until you get a sort of cream. Add 250 gr of ground almonds and mix it well.
Put the mix over a sheet of baking paper, cover with another sheet of baking paper and compact it with your hands (or with a rolling pin). Cut the cookies with a glass or with some mold and cook in the oven at 300ºF for 25 minutes.
Baked beef steak with potatoes and green mojo sauce

This is a complete recipe: meat, potatoes and green mojo sauce (a sauce from the Canary Islands). Be aware if you like undercooked meat, because in this recipe the meat will become well, well and once again well done. It’s really great the taste of potatoes cooked on the oven, and impregnated with the juices and fat drop from the beef steak, really delicious with or without the green mojo sauce.
Ingredients (1 person):
- 1 beef steak
- 2 small potatoes
- 3 garlic cloves
- Parsley
- Coriander
- Black peppercorns
Clean the potatoes and then cut them into slices, there is no need to peel them. Place the beef steak in the center of an oven tray. Place the potatoes around the beef steak. On this way potatoes will absorve juices and fat drop from the steak. Add salt to potatoes and cook in the oven at 350º F for one hour.
To prepare the green mojo sauce add to a mortar 3 garlic cloves, parsley, some black peppercorns, coriander and rock salt. Grind with the pestle. Add olive oil and mix it again. Add more or less oil depending if you prefer the sauce more liquid or dense.
Turn the beef steak every 10 or 15 minutes. The first time you turn it, add rock salt in the other side of the steak.
Spinach and feta cheese pie

This recipe is based on a video from Jamie Oliver, but instead of using philo pastry (because I didn’t find on supermarket) I’ve used shortcrust pastry so it will be more similar to a quiche.
Ingredients:
- 4 eggs
- 400 gr feta cheese
- 1 spinach bag
- 1 sheet of shortcrust pastry
- Pine nuts
- 1 lemon
- Grated emmental cheese
- Nutmeg
To prepare this spinach and feta cheese pie, which is very similar to a quiche we will start putting a pan in the fire. When pan is hot add pine nut and keep on fire for about 5 minutes until the are toasted. On the same pan add some oil oil and the spinach bag. Don’t get foolish about how much space they take at the beginning as will reduce a lot. Add some nutmeg to the spinach as well as grate the skin of a lemon. Move them and cook until they get reduced.
On a bowl add 4 eggs, 400 gr of shredded feta cheese, black pepper and some grated emmental cheese. Mix and crush it will with a fork. Then add the toasted pine nuts and spinach. Mix it well.
Cover the mold with a sheet of shortcrust pastry, leaving the paper so it will be easier to unmold. With your hands accomodate the shortcrust pastry to the mold. Fill it with the mix, and distribute well with a spoon. Cut the waste of shortcrust pastry, leaving about 2 fingers above the mix. Cover with grated emmental cheese and cook in the oven at 400º F (200º C) for 25 minutes.
